Following the great response to Part I, I've included the Toolbox and Layers palette in Part II so that you can see which tools I'm using.
I wasn't entirely convinced, at the end of Part I, that I'd gotten the proportions correct, so I did a rough sketch over the top of the painting which you will see in the opening moments.
This process is encouraging me to work a lot faster - this second video clip presents minutes 7-17 but speeded up to about 150% playback to keep the filesize under 10MB.

As far as the layers are concerned, for my more detailed work I use lots of layers but this being a speedpainting I wanted to really test myself and step out of the comfort zone. It seemed to work.
And I'm always happy to answer questions, so you're welcome.
